Students from Community Learning Center in Neenah were excited to welcome Brenda Leigh, ThedaCare registered dietitian, earlier this month. Brenda discussed the benefits of eating pumpkin, especially as popular as it is this time of the year. She also talked about the benefits of eating “every color of the rainbow,” especially both light and dark colored vegetables. She said the darker the vegetables, the better because they are packed with vitamins and antioxidants. Brenda made a pumpkin and chickpea hummus recipe with students. Each student spread the hummus on crackers and decorated a monster face using cut up vegetables and raisins. Students loved the recipe and asked to have it to bring home!

Pumpkin Hummus

1 can garbanzo beans (rinsed and drained)
¾ cup canned pumpkin puree
1-2 Tbsps. lemon juice
1/3 cup extra virgin olive oil
¼ cup tahini paste (or peanut butter)
1-2 garlic cloves
½ tsp. cinnamon
½ tsp. nutmeg
½ tsp. ground allspice
½ cup water
Salt to taste

Place the beans and ½ cup water into a blender, and puree until a smooth paste forms. Add the pumpkin puree, lemon juice, olive oil, tahini or peanut butter, garlic, cinnamon, nutmeg and allspice. Cover and puree again until smooth. Use additional water as needed to achieve a smooth consistency. Season to taste with salt.
